First Time Frittata

It was our first wedding anniversary in September 2015 and with the traditional gift being paper, my parents gave us a cookbook as a small gift.

My parents know that I’m a huge fan of Gino D’Acampo so I was delighted to receive his cookbook – Gino’s Veg Italia! The healthier way to eat Italian.

My husband and I both love cooking and enjoy trying new things so we’ve made a few of Gino’s recipes already – and they haven’t disappointed!

The cookbook includes a wide range of recipes which are well categorised and very easy to follow. Some of the categories include – Bread, Pizzas and Pies, Risottos, Soups, Salads, and Eggs.

I made one of  the recipes just the other week – Summer Vegetable and Asiago Chesse Frittata – and I was so pleased with how it turned out.

It was the first time I’d made frittata so it was new to me, but it was so quick and easy to make. I prepared all of the ingredients first and then carefully followed the recipe. I couldn’t find Asiago Cheese in my local store so as recommended by Gino in his book, I used Brie instead. The recipe serves 6 and if you have any leftovers, you can also eat it cold for your lunch the next day!

I’ll definitely be making frittata again and I’ll be sure to try out some more recipes from Gino’s book soon too.
